This is a great, low-calorie, delicious recipe that makes a great main course or appetizer.

Ingredients:

  • 2 tbl. tomato paste
  • 1/2 tsp. olive oil
  • 1/2 tsp. minced garlic
  • 1/2 tsp. fresh, chopped, oregano
  • 1/2 tsp. chipotle chili powder
  • 1 1/2 tsp. water
  • 1/2 pound of uncooked, peeled and deveined shrimp

In a small bowl, combine the water, oil, tomato paste, garlic, chili powder, and oregano. Mix well with a fork or a whisk. The marinade will be thick.

Use a brush to coat each uncooked shrimp on each side. If you want, use a few skewers and place 3 to 4 shrimp on each skewer. Place the shrimp in the refrigerator.

Prepare a hot charcoal or gas grill. Once the grill is hot, place the shrimp skewers on and grill for about 5 to 7 minutes, turning once halfway through. If you don't use skewers, you may want to use a grill basket. Cooking time will vary depending on the temperature of the grill, so be sure to watch carefully.

Serve immediately.
