Pork is a great alternative to chicken and beef, as you can usually find extremely lean cuts of pork. This is a delicious main course that will fill up your plate with low-fat choices.
Ingredients:
Preheat the oven to 400 degrees, and prepare a baking dish by lightly coating it with cooking spray.
In a frying pan, add the sesame seeds only and cook them over low heat, stirring constantly. Once they start giving off a toasty aroma and turn golden brown (about 1 to 2 minutes) remove the seeds from the pan, and allow them to cool.
In a small bowl, add the cayenne, celery seed, coriander, cumin, sesame oil, cinnamon, and onion. Stir until even.
Use the spice rub to lightly coat each side of the pork tenderloins, and bake for about 15 minutes. 160 degrees is medium for pork, 170 degrees is well done.
Coat with toasted sesame seeds. Serve immediately.
