This is a simple chicken recipe that delivers big flavors of basil and tarragon in a French-inspired herb combination. For even more intense flavor, pound the chicken breasts flat and use the mustard coating mixture liberally.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup dry white wine
  • 3 tbl. Dijon mustard
  • 2 tbl. olive oil
  • 2 tbl dried tarragon
  • 2 tbl. honey
  • 2 tsp. dried thyme
  • 2 tsp. dried basil
  • 1/8 tsp. freshly ground black pepper
  • 1/8 tsp. salt (optional)

In a bowl, mix the honey, Dijon mustard, basil, tarragon, thyme, pepper, and salt (if you are using salt.) Brush each chicken breast on both sides with this mixture.

Place the chicken in a skillet and pour 1/4 cup of white wine around the chicken. Simmer over medium to low heat until liquid reduces, about 10 minutes.

Pour another 1/4 cup of white wine in the skillet and continue to cook until chicken is no longer pink. Remove from heat and keep the remaining liquid.

Add the rest of the white wine to the skillet along with any of the mustard mixture you have leftover. Over medium heat, cook the liquid until it reduces, stirring any browned bits from the pan into the sauce. Once the sauce is reduced by about half, remove and serve as sauce over the chicken.
