This is a quick and healthy way to begin your day or as a midday snack. Using tortillas instead of other breads is always an excellent way to cut out calories and excess carbohydrates from your diet.

Ingredients

  • 1 flour tortilla
  • 2 tbl. chopped corn
  • 1/2 cup chopped tomato
  • 2 tbl. chopped onion
  • 2 tbl. salsa
  • 2 egg whites or 1/4 cup egg substitute

Combine tomato, onion, and corn in a small skillet and cook over medium heat until the vegetables are tender. Add the egg whites or egg substitute and scramble until cooked, about 3 minutes.

Wrap the egg mixture in the tortilla with the salsa, into a roll, and serve immediately.
