Balsamic vinegar is one of the best ways to flavor meat, enjoy a salad, or add a lot of flavor to any recipe without adding a ton of calories. This is an easy recipe that is fast, delicious, and low-calorie.

Ingredients:

  • 6 boneless, skinless chicken breast halves
  • 1 (14.5 oz.) can diced tomatoes
  • 1 medium onion, sliced
  • 2 tbl. olive oil
  • 1/2 cup balsamic vinegar
  • 2 garlic cloves, minced
  • 1 tsp. dried rosemary
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1/2 tsp. dried thyme
  • ground black pepper to taste

In a skillet, heat the olive oil. Lightly season each chicken breast half with ground pepper. Combine onion, garlic, and chicken in the skillet and cook until the chicken is just brown on both sides and the onion starts to caramelize.

Add the balsamic vinegar over the chicken and onions. Top with diced tomatoes, and season with basil, rosemary, oregano, and thyme.

Simmer until chicken is no longer pink, about 15 minutes. Remove from heat and serve
